Whisk 200g cornstarch, 150g flour, 100g butter, 80g sugar, 3 egg yolks, and a teaspoon of vanilla into a soft dough. Roll, cut into circles, and bake 10 minutes at 180°C. Once cool, sandwich two cookies with generous dulce de leche (store-bought manjarblanco works perfectly) and roll the edges in shredded coconut or dust with powdered sugar.
